I woke up this morning and it was raining pretty hard, one would even say it was pouring. As I checked the forecast…more rain, I decided today was going to be a soup kind of day.
I feel like we reserve certain kinds of food for different seasons, and it makes sense, salad is more readily available in the summer…especially if you want fresh ingredients.
But the fact that it’s spring doesn’t deter me from craving a hot, soul warming soup, so I’m going to make one today.
I found this recipe a couple of years ago when I was really getting into spicy food, but you can make it as hot as you like, it’s called the 15 minute coconut curry noodle soup, and you can find it at thewoksoflife.com
Yeah that’s right, 15 minute soup. PLUS you only have to use one pot, so when you’re done making this delicious soup, you don’t have to spend all day cleaning up, just eating!
This falls in the Jen’s Favourite Things category because I love love love curry soup, I became addicted on a trip to Thailand a few years ago, and I’ve tried really hard to re-create the taste but nothing comes close, until this.
