Does anyone NOT like chocolate? Seriously, let me know because I will have your share of chocolate. Today is International Chocolate Day and if there was ever a day I wanted to indulge, this is it. I’ve been perusing the internet for a delicious recipe to share but I can’t stop thinking about this amazing fudge I had last year at Rancho Vignola’s fall sale.
Unfortunately, I couldn’t find the exact recipe, but it goes something like this: dates, dark chocolate, and cashews. That’s it, and it is seriously good. So you can try that out for yourself and see how it goes OR you could follow this recipe I found instead, for more great recipes you can check out their website. Happy eating!
14 large, organic Medjool dates
1/4 cup organic golden Incan berries
3 tbsp organic raw, whole cashews
5 cubes of crystallized ginger
1/4 cup dark chocolate domes (roughly chopped)
3 tbsp coconut flour
2 tbsp chocolate protein powder
1/4 cup organic shredded coconut
Cover the first four ingredients, just barely, with water for about 45 minutes. Then drain and pulsed the soaked ingredients in a blender or food processor. Transferred the mixture back into the bowl, added the roughly chopped domes, the coconut flour and the protein powder and mixed it all nicely with my hands.
I then spread the coconut out on a plate, pressed the mixture into little balls, and rolled them in the coconut.
